Ingredients:

  • 2 cups blanched almond flour
  • 1 cup unsalted butter (8 tablespoons), softened
  • 2 tablespoons coconut flour
  • 1/3 cup granulated stevia
  • 1 whole egg
  • 1 egg yolk
  • 1 scoop of shifted vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • A pinch of salt

Optional Frosting:

  • 3 tablespoons coconut butter
  • 1 tablespoon shifted vanilla protein powder
  • Unsweetened shredded coconut 

Instructions:

In a medium bowl, combine almond flour, coconut flour, protein powder, baking powder, and salt.

In a separate bowl, use an electric mixer to cream the butter and stevia until smooth.

Beat in the whole egg, egg yolk, and vanilla extract until fully incorporated.

Gradually mix the dry ingredients into the wet ingredients until a smooth dough forms.

Wrap the dough in plastic and chill for 30 minutes.

Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll the dough to 1/4-inch thickness. Cut into shapes and arrange on the baking sheet, spacing them about 1 inch apart.

Bake for 12-15 minutes, until the edges are lightly browned.

Cool on the sheet for 5 minutes, then transfer to a wire rack.

For the frosting, blend coconut butter and protein powder until smooth. Decorate cooled cookies using a piping bag, top with the shredded coconut if desired.
