Ingredients:

  • 2 scoops of Shifted vanilla-flavored whey protein powder
  • ¼ cup almond flour
  • 1 large egg
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened almond milk (or preferred milk)
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ¼ teaspoon salt
  • 1 tablespoon melted ghee or coconut oil (use coconut oil for vegan option)
  • 3 teaspoons stevia extract

For the Topping:

  • ½ tablespoon cinnamon
  • 1 tablespoon granulated stevia

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a donut pan with non-stick spray or a dab of ghee/coconut oil.
  2. In a medium bowl, whisk together the dry ingredients.
  3. In another bowl, mix the wet ingredients until smooth. Gradually incorporate the dry ingredients, mixing for 2-3 minutes until the batter is smooth.
  4. Distribute the batter evenly, filling each donut cavity in the pan about ¼ cup each.
  5. Bake for 13-15 minutes or until a toothpick comes out clean when inserted into a donut.
  6. Cool donuts on a wire rack for at least 10 minutes.
  7. Mix cinnamon and granulated stevia on a plate and dip each donut to coat.
